Vegan Blueberry Bran Muffins

Ingredients

1 cup wheat bran
1/3 cup oat bran
2/3 cup whole wheat pastry flour
1 tsp baking soda
1 tsp baking powder
6 1/2 tbsp flax meal
1/4 cup agave nectar
1/4 cup orange juice
1 cup soy milk
1 egg's worth of egg replacer
1 cup blueberries (or other fruit)
nuts optional
Directions

1. Preheat oven to 400 degrees.
2. Mix dry ingredients.
3. Mix wet ingredients.
Put blueberries in with the dry ingredients. Add nuts too, if you'd like. (Though those aren't included in the nutrition information.)
5. Make a well in the dry ingredients.
6. Add the wet ingredients to the dry. Stir just enough so they're all wet-- the less you stir, the better the muffins. (But you don't want a lot of clumps, because no one wants to bite into a muffin and get a mouthful of uncooked flour...)
7. Pour or spoon into greased muffin tins (the smaller sort).
8. Cook about 17 min., until browned. (These will, however, brown more than regular muffins because of the bran and the flax meal.)
9. Take out of muffin tins immediately after removing from the oven and let cool on a wire rack. (This will keep the bottoms from getting soggy.)

NOTE: These are best eaten soon after cooking, as are all baked goods, but they freeze quite well too. Excellent as a mid-morning or mid-afternoon snack.
